I recently discovered how versatile kale is. I used to only use it as a lettuce substitute. I sauté my kale with olive oil, salt, pepper, onion powder, garlic powder and Frank’s hot sauce. I plate my kale and add a ½ cup of cooked quinoa and ½ cup of chickpeas. I mix it all together and get a complete delicious light meal. This recipe is very customizable because you can use different spices, carbs and proteins.
