Round 2 of the crock pot pulled chicken. I enjoyed it so much last week that I made it again this week.
I used 1 lb of chicken breasts and 1 lb of chicken thighs. I also used a little bit more than a 1 cup of BBQ sauce. I mixed the seasonings in with the BBQ sauce and coated the chicken. I put the crock pot on low for 10 hours. I got the sauce to chicken ratio right.
The chicken was still a little dry so next time, I’ll put the crock pot on 8 hours. 3rd time is always a charm!
This week, I had my pulled chicken with broccoli and roasted potatoes.
