For the main dish, I made a summer pasta salad. I used the Ronzoni Gluten Free Rotini, which was delicious and had the perfect texture. It is a blend of white rice, brown rice, corn and quinoa and tasted just like regular pasta.
For the pasta salad, I just cut up some yellow pepper, orange pepper, cucumber, scallions, avocado and grape tomatoes into bite sized pieces. I added fat free Italian dressing and mixed it all together. That’s it! While the water is boiling/pasta cooking, you have time to chop up all the veggies.
This was a quick, healthy and delicious dish. A hearty pasta salad is always a crowd favorite too.
