Hi! I’m Amanda and I’ve been gluten-free since April 2015. I was eating gluten for almost 24 years until the day I went to the allergist and learned I had a gluten allergy. My life was flipped upside down.
I’ve had a love-hate relationship with food my entire life. I loved eating food, but hated the way I looked and was very overweight until 3 years ago. I decided to start Weight Watchers and it was the best decision I’ve ever made. Weight Watchers taught me how to eat correctly and I lost 35 lbs in a year. I am currently a lifetime member and have successfully kept my weight off for the past 2 years. I felt like I finally had my food life in control.
Starting in August 2014, I began to experience digestion issues when eating. I didn’t think anything of it. Whenever I had a beer, my stomach wanted to kill me, so I cut it out. Fast forward a few months, I started breaking out into hives eating shrimp. I decided it was time to go to the allergist and in April 2015, I learned I could no longer eat gluten or shrimp. Shrimp was a food group for me.
Since this diagnosis, I have again had to re-teach myself how to eat properly. I’m working on creating new recipes and changing up my go to meals and snacks. Join me on my gluten-free journey.
